The Incredible Edible Egg

We love our eggs at Kitsap CrossFit.  We advocate eating the whole egg, not just the whites.  We also think if you can get cage-free and Omega-3 fortified, even better!  For those of you worried about the cholesterol in eggs, first, don’t.  Second, read this.  Dietary cholesterol isn’t the demon it has been made out to be.  If you’re still worried, try to lose the grains.

Over the weekend I found some great egg recipes that I wanted to share.  Two come from CrossFit NorCal, home of Robb Wolf, CrossFit’s own subject matter expert on nutrition.  Try these egg cupcakes, they look amazing.  Also, the link at the top of that post will take you to this recipe, which looks equally impressive.  Also worthy of mention are from another favorite, Mark’s Daily Apple.  These omelet muffins look fantastic!  This recipe calls for mayo.  He provides a link to his recipe for homeade mayo which I highly recommend.  If you don’t have time to make that, try canola oil mayo or olive oil mayo.  Just try to avoid mayo made with soybean oil. 

These are great to make ahead of time for a quick breakfast or for a portable high-protein snack!

  • I made the egg cupcakes last night and added a bit of feta cheese. Yummy!!! Kids liked them too. You need to create a tab on the site to post all of the yummy recipes you find Amy. Keep them coming!

  • Looks like a killer workout – can’t wait to see what I’m up against when I head out for culver city crossfit in about a 1/2 hour. What’s the plan for turkey day and weekend, scary surprise workouts??!!!

  • Over the past year I’ve gotten really relax about what I eat and I’ve noticed it, even though I know better. The link to loose the carbs was a great reminder. Gary Taubes covers this topic in gross detail in Good Calories, Bad Calories. I am working the snacking on carbs out of the diet along with other bad carb sources.
